Noodles made with zucchini using pesto
Throw zucchini noodles in a homemade basil pesto instead of ordinary pasta. Sophia says, “It’s light, flavourful, and remarkably easy to make.”
Fried rice with cauliflower
Grated cauliflower replaces regular rice. For a quick, low-carb dinner, toss vegetables, a protein of your choosing, and a sloshful of soy sauce. “You won’t even miss the rice!,” Laughing is Sophia’s reaction.
Salad with Grilled Chicken
Match avocado, mixed greens, cherry tomatoes, and grilled chicken. Dress it olive oil and lemon juice. “This is my usual dinner when I’m pressed for time,” she says.
Peppers Stuffed Bell-wise
Ground turkey, chopped tomatoes, and spices fill half-sized bell peppers; bake. Sophia notes, “They’re perfect for meal prep and satisfying.”
Her guidance on success? “Start small and play about with fresh foods. Staying low-carb once you discover foods you enjoy comes naturally.
