Chef and proponent of Mediterranean cuisine Ivy Davis thinks that good ingredients have great power. “The Mediterranean diet is so flexible and delicious,” she notes. “Everything depends on balance.”
Here are some meal ideas from Ivy:
Ivy stacks greens, tomatoes, cucumbers, olives, and feta cheese in Greek-inspired Salad Bowls. “Top it with grilled chicken or chickpeas; you’ll have a fresh and filling dinner.”
Ivy says, “This dish is a staple in my house.” Baked Salmon with Lemon and Herbs She makes fish using olive oil, garlic and some dill sprinkles. Accompanied with quinoa on the side, this is both good and nutritious.
“This one-pot meal is perfect for busy evenings,” Ivy says of vegetable ratatouille. She sautés bell peppers, zucchini, eggplant in olive oil with a little tomato sauce. “It’s hearty enough to stand on its own or couples wonderfully with whole-grain bread.”
Ivy stuffing bell peppers with ground turkey, brown rice, and seasonings combines three elements. “Bake till tender; you’ll have a satisfying, nutrient-dense dinner.”
Her worldview? Eating healthfully does not have to be monotonous. Every dinner with Mediterranean tastes celebrates something.
