One does not have to complicate eating a vegetarian, gluten-free, and balanced diet. Expert in gluten-free and vegetarian cooking Layla Cole provides a range of meal ideas that are both wholesome and pleasing.
Layla advises, “food should be an experience, not a restriction.” She thinks that eating vegetarian and gluten-free food can be as good as it is healthy given the correct components.
Taco made from roasted vegetables and chickpeas
Tacos made with roasted vegetables and chickpeas are Layla’s preferred dish. Just olive oil roasted sweet potatoes, bell peppers, and onions with cumin, chilli powder, and paprika. Combine them then with chickpeas in a gluten-free corn tortilla. Top avocado, salsa, and cilantro. “This meal keeps you full and satisfied all night long because it is loaded with fibre and protein,” Layla says.
Pasta with Creamy Tomato Basil
Layla suggests her creamy tomato basil spaghetti for individuals seeking comfort food. She creates a creamy sauce combining cashews, garlic, nutritional yeast, fresh basil using gluten-free pasta. “This dish is great for vegetarians trying to nourish their bodies since it’s high in antioxidants and good fats,” Layla notes.
Tofu Stir- Fried with Vegetables
Usually a winner is a quick and simple stir-fry. A flexible dinner fit for your taste, Layla’s stir-fried tofu with mixed vegetables can be customised. Just sauté with tamari sauce, ginger, and garlic tofu, bell peppers, broccoli, and snap peas. “Tofu is a great source of plant-based protein; the vegetables offer lots of vitamins and minerals,” Layla points out.
Apart from simplicity of cooking, Layla’s vegetarian and gluten-free dishes are bursting with taste. “Eating gluten-free is about using fresh, whole foods to create satisfying meals—not about sacrificing taste,” she explains.
